The local traditional cook

“As far as I can remember, I can feel again the fragrances and flavours of the meals that my mother and grand mother cooked in our farm of Chalosse”.

Christian Lanuque – breeder and cofounder of Excel Company.

A land of flavours

Thanks to a generous nature, there is an culture composed by a lot of family farms. This land is a place of an authentic production: duck foie gras, chickens, capons, beefs, asparagus, kiwis…

A specific social structure

Until the middle of the XXe century, most of the farmers were under the state of sharecroppers. We can say they were not so rich, the fact that they ate their own production made them happy and trustful into the future. They helped a lot each other and this was a principle of their way of life which, sometimes, ended in a great meal in usability.

A unique gastronome patrimony

We could see a real increase of the consumption of farm products and especially fat ducks, this gave birth to a new way to cook and to a natural gastronomy.
Forwarded from mothers to daughters, this cook memory and tradition live the Excel Company breeders and have given to the foie gras an image of a gourmet patrimony.
